As we all know, summer is hottest of all the seasons. This summer when we all are at home and can't go out, how about making a delicious dessert with ingredients which are easily available at home. We always crave for one and only one thing during sunny summer days i.e ice cream, which gives us a quick boost of energy. Ice cream might be the first food that you reach for in this season. Generally, ice creams are made using whipped cream which will not be easily available at everyone's home during this lockdown period. So I thought of sharing an ice cream recipe with traditional Indian flavours which is known as Kulfi.
What is Kulfi?
This might help the people who are not aware of Kulfi. Kulfi is an Indian version of ice cream which is creamier and denser than the normal ice creams. Kulfi is made without any whipped cream. In the process of making Kulfi the milk is boiled in slow simmer until it is reduced to almost half in volume and becomes naturally thick and creamy. Kulfi has traditional Indian flavours of saffron and cardamom powder.
Summers also remind us of seasonal fruit which is Mango. What else can be more delicious than a combination of Mango and Kulfi? This Mango Kulfi recipe with just few ingredients that are easily available at home during this lockdown period can make your summer perfect.
Notes
▪︎In this Mango Kulfi recipe I have used 1/4th cup of powdered dry fruits like almonds, cashews and pistachios. You can also replace it with only one type of dry fruit powder. These powdered dry fruits will help to thicken the milk faster and gives you a nice texture.
▪︎If you don't want to add any of the dry fruits to your Kulfi then just add 1 tablespoon of cornflour to the milk which will also help to thicken the milk faster.
▪︎Even if you don't have cornflour as well as dry fruits you need not worry, the milk will just take some more time to get thick.
▪︎ If you don't have Kulfi moulds, you can use paper cups instead.
▪︎ After pouring the Kulfi mixture to the paper cups, cover it with aluminum foil to avoid any moisture formation.
Freezing Time : 4 hours.
Total Time : 4.30 hours
Servings : 6 Kulfi.
Ingredients
▪︎Milk - 1/2 liter (Full cream milk)
▪︎Mango puree - 1 cup
▪︎Sugar - 3 tbsp.
▪︎Powdered dry fruits - 1/4th cup
▪︎Cardamom powder - 1 tsp
▪︎Saffron - 3 or 4 strands.
Procedure
▪︎ Heat up the milk in a non stick pan and get it to boil. Take 3 tablespoons of boiled milk into a small bowl, add saffron strands to it and keep aside.
▪︎ Keep stirring the milk occasionally to prevent it from burning. After 10 minutes add the powdered dry fruits, cardamom powder, sugar and soaked saffron to the milk and stir. Reduce the milk till it becomes half of its original volume.
▪︎Let the reduced milk cool down completely.
▪︎ Add mango puree to the reduced milk and mix until it is well combined.
▪︎ Now pour the mixture into the paper cups and cover it with aluminum.
▪︎ After freezing it for 10 minutes, insert ice cream sticks in each paper cups and freeze it for 4 hours.
