Eggless Vanilla Sponge With Mango Frosting!

  This mango season I have tried alot of mango recipes and also shared them with you. As I am a homebaker, these days I am getting lot of orders for the mango flavour cakes and some who stay far and cannot place orders have asked me to share a simple sponge cake recipe that can be baked to make their loved ones' birthday special. This reason got me to share a simple and easy vanilla sponge cake with twist of mango frosting which will make the cake look beautiful! Being mango a seasonal fruit you need to be quick and plan to bake it.

  

  

NOTES

 ▪︎In this recipe I have added some yellow food colour to the vanilla sponge to go with the mango frosting, adding colour to the vanilla sponge is optional.

▪︎Use room temperature butter. Here I am using salted amul butter.

▪︎I generally, use alphonso mangoes to make the puree to add to the frosting. In case if you dont get alphonso, you can use any variety of mangoes which are ripe and sweet. You can also use canned Mango pulp, if fresh mangoes are not available.

▪︎ If you are not having electric beater you need not worry, use powdered sugar instead. Here in the recipe the quantity of sugar is 3/4th cup so take 3/4th cup of granulated sugar and grind it.



How To Make Perfect Mango Puree?

This recipe requires 1/4th cup of mango puree. Steps for making perfect  mango puree:

▪︎ Peel, de-seed and cut the mango into small small pieces. 

▪︎Use your food processor to make the mango pieces into a semi-liquid form.

▪︎For my recipe I have added 1 tablespoon of sugar to the mango puree. You can completely avoid this step or you can adjust the sugar as per the taste.

▪︎Use well ripened sweet mangoes for the best results.


Preparation Time : 20 Minutes
Baking Time :  30-35 Minutes 
Cooling Time : 30 Minutes 
Frosting Time : 20 Minutes 
Total Time: 1 hour 45 Minutes 


Ingredients 

Vanilla sponge 
▪︎All purpose flour - 1 1/2 cups
▪︎Curd - 1 cup
▪︎Granulated  sugar - 3/4 th cup
▪︎Baking powder - 1 tsp
▪︎Baking soda - 1/2 tsp
▪︎Butter - 3 tbsp ( room temperature)
▪︎Vanilla essence - 1 tsp
▪︎ Milk - 1/4th cup
▪︎ Chopped mangoes to garnish.

Mango frosting 
▪︎ Whipping  cream - 1/2 cup
▪︎ Mango puree - 1/4 th cup
▪︎ Yellow food colour 



Procedure 

▪︎ In a large size mixing bowl take butter and sugar, beat it for 2-3 minutes with electric beater. 

▪︎ Now add curd, baking powder, baking soda, yellow food colour and vanilla essence. Beat until the sugar gets completely  dissolved.

▪︎Once the sugar is dissolved add the sieved all purpose flour and milk. Mix well with the help of spatula.

▪︎ Pre-heat the oven at 170C for 10 minutes  and grease the baking tin with parchment paper.

▪︎Transfer the batter into the baking tin and bake it for 25-30 Minutes. Insert toothpick in middle and check, if the toothpick comes out clean then the cake is baked.

▪︎ Till the time the cake cools to room temperature let's make the mango frosting.

▪︎ In a medium size mixing bowl take whipped cream and beat until stiff peaks are formed.

▪︎ Now add mango puree and yellow food colour. Fold into the cream using cut and fold method with the help of spatula.

▪︎ Once the cake comes to room temperature frost it with the mango cream.
Pour some pieces  of chopped mangoes on the top to garnish.
