Bakery style Cherry Vanilla Chocochip Muffins! How does that sound ? These are easy and simple to bake. After posting lot of cupcake recipes for couple of weeks, thought of posting a simple and easy muffin recipe. I feel the best part of baking is to try out recipes with seasonal fruits. Adding twist of cherries and chocochips to a vanilla muffin can make a great combo and can also be perfect for your anytime snack. These bakery style cherry vanilla chocochip muffins just melt in your mouth. I bet, if you try out this recipe surely you are going to love it. You can also use chopped pistachios for vibrant color. The fun part was making these homemade muffin liners out of parchment paper to get that bakery style look.


 How to make muffin liners out of parchment paper?

You wont believe how easy it is to make muffin liners out of parchment paper and they really look very pretty! You are good to go if you have a roll of parchment paper in the kitchen.

▪︎ Take a small glass or can that fits snugly in the bottom of the muffin tray. 

▪︎ Now, cut the parchment paper into 6" squares.

▪︎ Place a square at the center of glass or the can you are using as mold. Then firmly press the parchment paper down around the sides of the mold with your hand. 

▪︎ Now, when you lift the parchment paper, you'll see cup shape structure is formed and you are done.

Note - No need to worry if you don't have parchment paper, instead use cupcake liners and enjoy this recipe!

THE FAT

I have used vegetable oil for this recipe. The desserts made with oil are lighter and have a fluffier sponge.

YOGURT

Important ingredient of eggless muffin recipe is yogurt as it gives structure and texture to these muffins. I always use homemade yogurt/curd/dahi for all my eggless recipes. Sometimes the homemade yogurt can be watery in that case separate the thick portion and that can be used.


Preparation Time: 20 Minutes 
Baking Time : 22 Minutes 
Total Time: 42 Minutes 
Servings : 11-12 Muffins 


Ingredients

▪︎ All purpose flour - 1 1/2 cups
▪︎ Curd - 1 cup
▪︎ Granulated sugar - 3/4 th cup
▪︎ Baking powder - 1 tsp
▪︎ Baking soda - 1/2 tsp
▪︎ Oil - 1/2 cup
▪︎ Vanilla essence - 1 tsp
▪︎ Chopped cherries - 1/2  cup
▪︎ Chopped chocolate-1/4th cup

Procedure

▪︎ In a large size mixing bowl take oil and sugar. Beat it for 2-3 minutes with an electric beater or a hand whisk.

▪︎ Now add curd, baking powder, baking soda and vanilla essence. Beat until the sugar get dissolved.

▪︎ Add the sieved all purpose flour. Mix well with the help of spatula.

▪︎ Time to add chopped cherries and chocolate to the batter and mix.

▪︎ Pre-heat the oven at 170℃ for 10 minutes and line muffin pan with parchment paper liners or cupcake liners.

▪︎ Using ice cream scoop fill cupcake liners about 2/3 full.

▪︎ Bake for 20-22 minutes at 170℃, until toothpick inserted into cupcake comes out clean.
