Eggless Cookies And Cream Cupcakes

If you are an oreo lover then you must try this recipe! This delicious cupcakes are stuffed with crunch of oreo inside and topped with cookies and cream frosting. Don't forget to keep an oreo on top of each cupcake!


It might be shocking to know that I was not an oreo lover. As I am a home baker I get lot of orders for these cookies and cream cakes and cupcakes, I always used to think why do people like oreo so much. Now, after baking so much of cookies and cream cakes and cupcakes I am in love with this flavour. I daily have this oreo biscuits with a cup of milk. You wont believe now I finish off entire packet in one go. Haha this might sound funny but yes this is how I thought of sharing my oreo journey with u all.

Baking Time : 22 Minutes
Frosting Time : 20 Minutes
Total Time: 2 Hours
Servings : 15 - 16 Cupcakes


Ingredients

Cookies and Cream Base

▪︎ All purpose flour - 1 1/2 cups
▪︎ Curd - 1 cup
▪︎ Granulated sugar - 3/4 th cup
▪︎ Baking powder - 1 tsp
▪︎ Baking soda - 1/2 tsp
▪︎ Oil - 1/2 cup
▪︎ Vanilla essence - 1 tsp
▪︎ Oreo biscuit - 1 packet
▪︎ Chopped oreos - 1 cup

Cookies and Cream Frosting

▪︎ Whipping cream - 1 cup
▪︎ Oreo biscuit - 1 1/2 cup oreo (grinded)

Procedure

Make Cookies and Cream Cupcakes

▪︎ In a large size mixing bowl take oil and sugar. Beat it for 2-3 minutes with an electric beater or a hand whisk.

▪︎ Now add curd, baking powder, baking soda and vanilla essence. Beat until the sugar get dissolved.

▪︎ Add the sieved all purpose flour. Mix well with the help of spatula.

▪︎Time to add chopped oreos to the batter and mix.

▪︎ Pre-heat the oven at 170℃ for 10 minutes and line muffin pan with cupcake liners.

▪︎ Place a whole oreo biscuit at the bottom of each cupcake liner and using ice cream scoop fill cupcake liners about 2/3 full.

▪︎ Bake for 20-22 minutes at 170℃, until toothpick inserted into cupcake comes out clean.

Make Cookies and Cream frosting

▪︎ In a large mixing bowl, beat whipping cream until it forms stiff peaks.

▪︎ Now add crushed oreos and mix well with the help of spatula, do not over beat.

▪︎ Place the icing in a piping bag fitted with a round decorating tip and swirl the frosting on top of the cooled cupcake going in circular motion.

▪︎ Top each cupcake with an oreo.
