Eggless Honey Cupcakes!

Delicious eggless honey cupcakes frosted with honey whipped cream and decorated with fondant bees. Don't forget the honey drizzle on top!


Few months back at a food event where I had my cupcake stall, suddenly a group of bees appeared out of nowhere. Unknowingly I kept my palm on a bee and it stung me. This bee sting has left mark on my palm, it might sound funny but yes I got the idea to try this honey cupcake recipe from the mark on my palm!


Preparation  Time : 15 Minutes
Bake Time : 22 Minutes
Frosting Time : 20 Minutes
Total Time : 2 Hours 
Serving : 12 Cupcakes


Ingredients 

Honey Cupcake:

▪︎ All purpose flour - 1 1/2 cups
▪︎ Curd - 1 cup
▪︎ Granulated  sugar - 1/2 cup
▪︎ Honey -1/4th cup
▪︎ Baking powder - 1 tsp
▪︎ Baking soda - 1/2 tsp
▪︎ Oil- 1/2 cup
▪︎ Vanilla essence - 1 tsp
  
Honey Whipped Cream:

▪︎ Whipping cream - 2 cups
▪︎ Yellow Food color - 2-3 drops
▪︎ Honey - 2 tbsp

Honey Bee:

▪︎ Yellow fondant
▪︎ Black fondant


Procedure 

Make Honey Cupcakes

▪︎ In a large size mixing bowl take oil, honey and sugar. Beat with electric beater or with a hand whisk until the sugar gets dissolved.
▪︎ Now add curd, baking powderbaking soda and vanilla essence. Beat for 2-3 minutes.

▪︎ Add the sieved all purpose flour. Mix well with the help of spatula.

▪︎ Pre-heat the oven at 170℃ for 10 minutes and line muffin pan with cupcake liners.

▪︎ Using ice cream scoop fill cupcake liners about 2/3 full.

▪︎ Bake for 20-22 minutes at 170℃, until toothpick inserted into cupcake comes out clean.


Make Honey Whipped cream frosting

▪︎In a large mixing bowl, beat whipping cream until it forms stiff peaks.

▪︎ Now add honey and mix with help of spatula, do not overbeat.

▪︎ If desired, add a few drops of yellow food coloring.

▪︎Place the icing in a piping bag fitted with a round decorating tip and swirl the frosting on top of the cooled cupcake going in circular motion.

▪︎Top with some honey and fondant honey bees.
