Eggless Vanilla Lemon Curd Mousse

How about whipping up some tangy and sweet cold dessert this weekend ? This is very easy by setting the mousse in wine glasses or any containers if you don't have one. 

Tips to make perfect Lemon Curd

Lemon curd is tangy, creamy and sweet. Making lemon curd from scratch might sound very difficult but, all you need is just 6 ingredients! 
▪︎ Use freshly squeezed lemons for perfect flavouring.
▪︎ Avoid adding cornflour directly to lemon juice, instead first mix it with water separately to avoid any lumps.
▪︎ If lemons are too tangy then sugar can be adjusted accordingly.
▪︎ Butter adds buttery flavour to the lemon curd.
▪︎ Adding yellow food color is optional.


Preparation Time : 30 Minutes
Setting Time : 4-5 hour.
Servings : 5

Ingredients

Lemon Curd
Lemon  juice - 1/2 cup
Sugar - 1/2 cup + 2 tbsp
Cornflour - 2 tbsp
Water - 2 tbsp
Butter - 1 tbsp
Lemon zest - 1tbsp
Yellow food color (optional)

Vanilla Whipped Cream 
Whipping cream - 1 1/2 cups
Vanilla essence 
 

Procedure

1 In a small bowl take cornflour and water, mix well until the paste is smooth and set aside.

2 In a saucepan, pour lemon juice and sugar and stir continuously over medium heat until the sugar dissolves.

3 Now pour the cornflour mixture and stir until the curd thickens. Set aside to cool down.

4 In a large mixing bowl take whipping cream and with the help of electric beater, beat until
it forms stiff peaks.

5 Add vanilla essence and mix well.

6 In a wine glass fill 1/2 with the vanilla cream and let is set in refrigerator for an hour.

7 Remove the glass from refrigerator and pour lemon curd on top of it.

8 Let the mousse set in refrigerator  for another 4-5 hours. Once the mousse is set slice some lemon and garnish it with pomegranate.
