Chocolate Blueberry Cupcakes! No Maida, No Sugar and No Eggs!

In search of some healthy and guilt free dessert recipe? Here I have something to share with ya'll - A healthy dessert giving a touch of Indian flavours. This recipe is without eggs, all purpose flour/ whole wheat flour and also without sugar.

Ingredients 


Oil - 1/4th cup
Jaggery powder - 1/2 cup + 2 tbsp
Curd - 1/2 cup
Coffee - 1/2 tsp 
Baking powder - 1 tsp 
Baking soda - 1/2 tsp
Vanilla essence - 1 tsp
Moong dal (grounded) - 3/4th cup
Coco powder - 1/4th cup
Whipping cream - 1cup
Blueberry crush - 1tbsp
Dried blueberries 
Rose petals



Instructions

1 In a bowl take oil and jaggery powder, mix for 2-3 minutes with the help of hand whisk. 
2 Add curd, baking powder, baking soda, coffee and vanilla essence, mix until it forms a smooth mixture.
3 Start adding moong dal powder and coco powder and mix.
4 Preheat the oven to 170 ℃ for 10 min. Grease cupcake moulds and fill 3/4th batter in each mould. 
5 Bake for 22-25 minutes at 170 ℃ in preheated oven.
6 In a mixing bowl take whipping cream and beat until stiff peaks are formed. 
7 Add 1 tbsp of blueberry crush and continue to mix for a minute.
8 Pour the cream on bottom side of each cupcake with the help of palatte knife and then top it with some dried blueberries and rose petals.
